- 10 gr Fresh yeast or 3 grams dry yeast but only in emergencies
- 240 dl Lukewarm water
- 320 gr High-protein flour (Manitoba or Tipo00)
- 6 gr Fine salt
- 3 tbsp Olive oil
Mix the Dough – Dissolve 10 gr Fresh yeast in 240 dl Lukewarm water, then add 3 tbsp Olive oil, 320 gr High-protein flour and 6 gr Fine salt. Stir until just combined.
First Rest (30 minutes) – Cover the bowl and let the dough rest at room temperature.
First Stretch & Fold – With damp hands, stretch and fold the dough once.
Second Rest (30 minutes) – Allow the dough to relax and develop structure.
Coil Folds – Perform four coil folds to strengthen the gluten network.
Third Rest (30 minutes) – Repeat another four coil folds.
Final Rise (1 hour 15 minutes) – Let the dough rise until puffy.
Preheat the Oven (250°C / 482°F) – Use a baking steel or stone for best results.
Shaping & Baking – Turn the dough onto a floured surface, divide into four loaves, and bake for 15 minutes until golden.
